  • 1.5 pounds pineapple fresh diced divided finely
  • 0.8 cup sugar

    1. Bring sugar and 1 cup water to a boil in a smallsaucepan over high heat, stirring until sugardissolves. Chill syrup until cold, about 1 hour.
    2. Purée syrup and 2 cups pineapple in afood processor until smooth. Set a fine-meshstrainer over a medium pitcher; strain, pressingon solids to extract purée. Stir in limejuice and remaining 2 cups pineapple. Divideamong molds. Cover; insert ice-pop sticks.Freeze until firm. Dip bottoms of molds intohot water for 20-30 seconds to loosen pops.
    3. Remove pops and serve.
