Ingredients

  • 1.5 tablespoons mint leaves fresh chopped
  • 0.3 cup honey 
  • 0.3 cup honeydew melon liqueur 
  •  wedges honeydew melon ripe cubed peeled seeded
  • sprigs garnishes: mint raspberries fresh
  •  pineapple cored peeled

Directions

  1. Process first 3 ingredients in a food processor until smooth, stopping once to scrape down sides.
  2. Transfer to a bowl. Cover and chill 2 hours.
  3. Cut pineapple in half lengthwise.
  4. Cut each half into 4 wedges.
  5. Grill, covered with grill lid, over high heat (400 to 50
  6. about 5 minutes on each side, or until lightly browned.
  7. Pour honeydew mixture into 8 chilled bowls; sprinkle with chopped mint. Arrange pineapple over honeydew mixture. Top each serving with raspberries and a mint sprig.
  8. Serve immediately.
