Ingredients

  • 1.5 cups graham crackers crushed finely (20 squares)
  • 0.3 cup butter melted
  • tablespoons sugar 
  • cups whipped cream softened
  • 0.5 can lemonade concentrate frozen thawed (12-oz size)
  • oz non-dairy whipped topping frozen thawed
  • serving food coloring red
  • serving lime zest

Directions

  1. Heat oven to 350°F. In medium bowl, mix all crust ingredients until well blended. Press in bottom and up side of 9-inch glass pie plate.
  2. Bake 8 to 10 minutes or until golden brown; cool.
  3. In large bowl, mix ice cream, lemonade concentrate, whipped topping and a few drops food color. Spoon and spread ice-cream mixture into cooled crust.
  4. Freeze until firm, about 4 hours.
  5. Let stand at room temperature a few minutes before cutting.
  6. Garnish with lemon peel.
