  • slices bacon 
  • 14.5 ounce canned tomatoes undrained chopped canned
  • 0.3 cup bell pepper green chopped
  • 0.1 teaspoon hot sauce 
  • 0.5 cup onion chopped
  • 0.3 teaspoon pepper 
  • cup regular rice uncooked
  • 0.5 teaspoon salt 
  • 1.5 pounds shrimp deveined peeled
  • 0.8 cup water

Directions

  1. Cook bacon in a large skillet until crisp; drain, reserving 2 tablespoons drippings in skillet. Crumble bacon; set aside.
  2. Saut onion and green pepper in bacon drippings until tender. Stir in tomatoes; cook over medium heat 2 minutes. Stir in remaining ingredients and reserved bacon.
  3. Pour mixture into a greased 1 1/2-quart casserole. Cover and bake at 350 for 45 minutes or until rice is tender, stirring once during baking.
  4. Serve hot.
