Ingredients

  • cups sugar 
  • cups water 
  • oz brandy 
  • oz juice of lime fresh
  •  egg whites 
  • 0.3 cup ice cubes 
  • serving angostura bitters

Directions

  1. In 2-quart saucepan, mix sugar and water.
  2. Heat over medium heat, stirring frequently, until sugar dissolves. Cover; store in refrigerator to use as simple syrup in step
  3. In beverage or martini shaker, mix Pisco, lime juice, egg white, 1 oz of the simple syrup and ice cubes until egg white is frothy.
  4. Pour into 3 small glasses; top each with 1 drop of bitters.
  5. Serve immediately.
