Ingredients

  • 0.3 teaspoon pepper black
  • 1 cup .5 can cannellini beans white canned rinsed drained
  • 16 ounce cartons egg substitute 
  • 1 cup grape tomatoes halved
  • 8 ounce turkey sausage sweet italian
  • 0.5 cup onion finely chopped
  • 1 ounce parmesan cheese fresh grated
  • 0.3 teaspoon salt 
  • 0.3 cup water 

Equipment

  • aluminum foil
  • broiler

Directions

  1. Preheat broiler.
  2. Combine first 4 ingredients; set aside.
  3. Heat a large nonstick skillet over medium-high heat.
  4. Remove the casings from sausage.
  5. Add sausage and onion to pan; cook 4 minutes, stirring to crumble sausage.
  6. Add tomatoes; cook 2 minutes, stirring frequently. Stir in beans.
  7. Pour egg mixture over bean mixture; cover and cook 3 minutes. Uncover; sprinkle with cheese. Wrap handle of skillet with foil. Broil for 5 minutes or until set.
