Ingredients

  • 1.5 cups chicken stock see 
  • 0.8 cup milk 
  • tablespoon olive oil extra-virgin
  • handfuls a couple parmigiano-reggiano grated
  • cup peas frozen
  • 0.8 cup cooking polenta quick
  • servings salt and pepper black freshly ground
  • slices pancetta cut as as bacon thick chopped

Directions

  1. Heat the oil in sauce pot over medium-high heat.
  2. Add pancetta and cook until crisp, 5 minutes then remove to a plate.
  3. Add the liquids to the sauce pot and bring to boil.
  4. Whisk polenta into the liquid and continue to whisk 2 to 3 minutes to thicken. Season with salt and pepper and stir in peas to heat through 1 minute more.
  5. Remove from heat, stir in cheese and adjust seasoning.
  6. Garnish with pancetta.
