Ingredients

  • tablespoons sugar 
  • 0.5 teaspoon ginger finely chopped
  • slice ginger fresh
  • cup sugar 
  • cup water 
  • tablespoons ginger fresh finely chopped
  • serving ice cubes 
  • oz hendrick's gin 
  • oz pomegranate juice 
  • oz simple syrup glaze (above)
  • tablespoon pomegranate seeds 
  • oz frangelico 

Equipment

  • sauce pan

Directions

  1. In small bowl, stir together 2 tablespoons sugar and 1/2 teaspoon finely gingerroot.
  2. Place mixture on small flat plate. Rub fresh gingerroot slice around rims of 2 martini glasses to moisten. Dip moistened rims of glasses in ginger sugar mixture.
  3. In 1-quart saucepan, heat ginger simple syrup ingredients over low heat until sugar is dissolved.
  4. Let stand 15 minutes. Use within 2 days.
  5. Fill martini shaker with ice.
  6. Add gin, pomegranate juice, and 1 oz of the ginger simple syrup; place lid on shaker, and shake until cold and blended.
  7. Pour into prepared martini glasses; add prosecco.
  8. Garnish with pomegranate seeds.
