  • 1.5 tablespoons dijon mustard 
  • 0.5 ounce porcini mushrooms dried chopped
  • 0.1 teaspoon rosemary dried crushed
  • 0.3 cup cooking wine dry red
  • large garlic clove minced
  • 1.5 pounds ground veal lean
  • cup onion finely chopped
  • 0.5 teaspoon pepper 
  • 1.5 tablespoons soya sauce 
  • 0.3 teaspoon sugar 
  • cup water 
  • 0.8 cup breadcrumbs fresh whole-wheat

Directions

  1. Preheat oven to 37
  2. Combine first 8 ingredients in a small saucepan; bring to a boil. Cook 8 minutes or until reduced to 1 cup.
  3. Combine mushroom mixture, mustard, and pepper in a large bowl; stir well. Stir in breadcrumbs; let cool slightly.
  4. Crumble veal over mushroom mixture; stir just until blended. Pack mixture into an 8 x 4-inch loaf pan coated with cooking spray.
  5. Bake at 375 for 50 minutes or until meat loaf registers 16
  6. Let loaf stand in pan 10 minutes.
  7. Remove meat loaf from pan; cut loaf into 12 slices.
  8. Note: Ground turkey or chicken can be substituted for ground veal.
  9. Serve leftover meat loaf slices on kaiser rolls with herbed mayonnaise and lettuce.
