  • pound anjou pears cored peeled halved
  • tablespoon chives fresh chopped
  • tablespoon juice of lemon fresh
  • teaspoons lemon rind grated
  • teaspoons olive oil divided
  • 0.5 teaspoon cracked pepper black divided
  • ounce boned center-cut loin pork chops ( 3/)
  • 0.5 teaspoon salt divided
  • 0.3 cup vodka dry white

Directions

  1. Heat 1 teaspoon olive oil in a 10-inch skillet over medium heat.
  2. Sprinkle the pork chops with 1/4 teaspoon salt and 1/4 teaspoon pepper.
  3. Add pork chops to skillet; saut 3 minutes on each side or until pork is done.
  4. Remove pork from pan, and keep warm.
  5. Heat 1 teaspoon oil in pan over medium heat.
  6. Place pear in pan, cut sides down. Saut 2 minutes on each side or until golden.
  7. Remove pear from pan, and keep warm. Stir in the vodka, scraping pan to loosen browned bits. Stir in 1/4 teaspoon salt, 1/4 teaspoon pepper, rind, juice, and chives, and cook for 1 minute.
