Ingredients

  •  garlic clove pressed
  • teaspoon olive oil 
  • small onion cut into thin strips
  • 0.5 teaspoon pepper 
  • ounce center-cut pork loin chops boneless
  • medium size bell peppers red cut into thin strips
  • tablespoon red wine vinegar 
  • 0.3 teaspoon salt 
  • servings garnish: thyme sprigs fresh
  • teaspoon or dried fresh chopped

Directions

  1. Rub both sides of pork chops with thyme, pepper, and salt. Cook pork in a large nonstick skillet coated with vegetable cooking spray over medium-high heat 2 minutes on each side.
  2. Add oil; cover, reduce heat, and cook 3 minutes.
  3. Remove pork from skillet.
  4. Saut onion, bell pepper, and garlic in skillet until crisp-tender. Return pork to skillet, and cook 2 minutes. Cover, reduce heat, and cook 9 minutes or until pork is done.
  5. Drizzle with vinegar.
  6. Garnish, if desired.
