Ingredients

  • teaspoon chili powder 
  • teaspoon chipotle sauce (such as McCormick)
  • 6-inch flour tortilla ()
  • 0.5 cup cilantro leaves fresh minced
  • pound pork tenderloins trimmed coarsely chopped
  • 0.8 cup onion chopped
  • 15.3 ounce dole pineapple tidbits undrained canned
  • 0.8 cup salsa verde (such as Herdez)
  • 0.5 teaspoon salt 
  • teaspoon vegetable oil

Directions

  1. Combine onion and cilantro.
  2. Heat oil in a large nonstick skillet over medium-high heat.
  3. Combine chipotle powder, chili powder, salt, and pork in a medium bowl.
  4. Add pork mixture to pan; saut 4 minutes or until browned.
  5. Remove from pan.
  6. Add pineapple to pan; bring to a boil. Cook 5 minutes or until slightly thickened. Stir in pork mixture; cook 1 minute or until pork is done.
  7. Warm tortillas according to package directions. Spoon about 2/3 cup pork mixture down center of each tortilla. Top each serving with 2 tablespoons onion mixture and 2 tablespoons salsa; roll up.
