  • ounce whole-kernel corn sweet with peppers, drained canned
  • 0.5 teaspoon garlic powder 
  • 0.3 teaspoon ground cumin 
  • tablespoons juice of lime 
  • 0.5 cup orange juice 
  • 0.3 teaspoon pepper 
  • ounces apricot-glazed pork roast cut into strips ( 3/4 cup)
  • 0.3 cup onion red chopped
  • cups prepackaged spinach 
  • teaspoons vegetable oil

Directions

  1. Remove large stems from spinach; tear into small pieces.
  2. Place in a bowl; set aside.
  3. Combine orange juice and next 5 ingredients (orange juice through pepper) in a 2-cup glass measure. Microwave at HIGH 2 minutes or until mixture boils.
  4. Add to spinach; toss.
  5. Add remaining ingredients; toss.
