Ingredients

  • tablespoons balsamic vinegar 
  • 0.5 teaspoon pepper black divided freshly ground
  • tablespoons basil fresh chopped
  • teaspoons garlic minced
  • cups grape tomatoes 
  • teaspoons olive oil divided
  • 24 ounce pork loin chops bone-in trimmed ( 1/)
  • 0.5 teaspoon salt divided
  • 0.5 cup shallots thinly sliced

Directions

  1. Heat a large nonstick skillet over medium-high heat.
  2. Add 1 teaspoon oil; swirl to coat.
  3. Sprinkle chops evenly with 1/4 teaspoon salt and 1/4 teaspoon pepper.
  4. Add pork to pan; cook 3 minutes on each side or until desired degree of doneness.
  5. Remove pork from pan.
  6. Add remaining 1 tablespoon oil, shallots, vinegar, and garlic to pan; saut 1 minute, scraping pan to loosen browned bits.
  7. Combine tomatoes, remaining 1/4 teaspoon salt, and remaining 1/4 teaspoon pepper in a medium bowl; toss gently to coat.
  8. Add tomato mixture to pan; cook 2 minutes or until tomatoes begin to soften.
