  • 14.5 ounce canned tomatoes diced drained canned
  • teaspoon chili powder 
  • teaspoons cider vinegar 
  • 16 ounce whole-kernel corn frozen thawed
  • 0.5 cup green onions chopped
  • 0.5 teaspoon ground cinnamon 
  • teaspoon ground cumin 
  • tablespoons pickled jalapeño pepper finely chopped
  • teaspoon oregano dried
  • 24 ounce center-cut pork chops lean (3/)
  • 1.5 cups bell pepper red chopped
  • teaspoon vegetable oil

Directions

  1. Combine first 4 ingredients; stir well. Rub cumin mixture over both sides of chops.
  2. Heat oil in a large nonstick skillet over medium-high heat until hot.
  3. Add pork chops; cook 3 minutes on each side or until browned.
  4. Add remaining ingredients (except parsley), scraping pan to loosen browned bits.
  5. Cover, reduce heat, and simmer 45 minutes or until pork is tender.
  6. Garnish with parsley sprigs, if desired.
