  • tablespoon apricot preserves 
  • 0.3 teaspoon pepper black
  • 0.5 cup apricots dried chopped
  • teaspoons thyme leaves fresh divided chopped
  • small apples i use 2 granny smith apples diced peeled
  • teaspoon olive oil 
  • 0.5 cup orange juice 
  • 24 ounce center-cut loin pork chops bone-in trimmed ( 1/)
  • 0.5 teaspoon salt 
  • 0.5 cup cranberries dried sweetened

Directions

  1. Combine orange juice and preserves in a small saucepan; bring to a boil.
  2. Remove from heat; stir in cranberries and apricots. Cover and let stand 15 minutes or until liquid is nearly absorbed.
  3. . While relish stands, sprinkle chops with 1 teaspoon thyme, salt, and pepper.
  4. Heat oil in a large nonstick skillet over medium-high heat.
  5. Add chops; cook 4 minutes on each side or until well browned.
  6. . Stir remaining 1 teaspoon thyme and apple into fruit relish.
  7. Serve chops with relish.
