Ingredients

  • 0.5 teaspoon pepper black divided
  • tablespoon capers drained
  • tablespoons dijon mustard 
  • cup less-sodium chicken broth dry white fat-free
  • tablespoon parsley fresh chopped
  • tablespoons juice of lemon fresh
  • ounce pork loin chops thin-cut boneless
  • 0.3 teaspoon salt 
  • 0.3 cup shallots chopped

Directions

  1. Sprinkle pork chops evenly with salt and 1/4 teaspoon pepper.
  2. Heat a large nonstick skillet over medium-high heat; coat pan with cooking spray.
  3. Add pork; cook 3 minutes on each side.
  4. Remove from pan; set aside, and keep warm.
  5. Add shallots to pan; saut 1 minute.
  6. Add remaining 1/4 teaspoon pepper, wine, and next 3 ingredients. Bring to a boil; cook 2 minutes or until reduced by half. Return pork to pan; cook over medium-high heat 1 minute.
  7. Sprinkle with parsley.
