  • 0.5 teaspoon pepper black freshly ground
  • 0.3 cup chicken stock see unsalted
  • tablespoons garlic fresh divided minced
  • 0.3 teaspoon kosher salt 
  • 1.5 tablespoons lemon zest grated
  • 24 ounce pork loin chops bone-in trimmed
  • 0.3 cup red wine vinegar 
  • tablespoons strawberry jam red
  • tablespoons sugar 
  • 0.5 cup onion diced white

Directions

  1. Heat a saucepan over medium heat. Coat pan with cooking spray.
  2. Add onion and 1 tablespoon garlic; cook 4 minutes or until onion is tender.

  4. Add sugar and fruit spread; bring to a boil. Cook 1 minute.
  5. Add vinegar; return to a boil. Cook until reduced to 1/2 cup (about 5 minutes).
  6. Heat a large grill pan over medium-high heat. Coat with cooking spray.

  9. Add pork to pan; cook 3 minutes on each side or until desired degree of doneness.
