Ingredients

  • cups bean sprouts 
  • tablespoons canola oil 
  • cups matchstick carrots 
  • lb rice noodles cooked
  • 0.5 cup dry-roasted usa-grown peanuts finely chopped
  • large eggs lightly beaten
  • bunch green onions cut into 2-inch pieces
  • 1.5 pounds pork tenderloin trimmed
  • servings spicy peanut butter sauce

Directions

  1. Cut pork into very thin pieces.
  2. Stir-fry pork in hot oil in a large wok over medium heat 5 to 8 minutes or until done.
  3. Place pork in a bowl.
  4. Add eggs to wok, and cook, stirring constantly, 1 minute or until set.
  5. Add pork and green onions to wok, and saut 1 to 2 minutes. Stir in Spicy Peanut Butter Sauce and hot cooked noodles.
  6. Divide pork mixture evenly between 8 plates.
  7. Place 1/4 cup carrots onto left side of each plate and 1/4 cup bean sprouts onto right side of each plate.
  8. Sprinkle each serving with 1 Tbsp. chopped peanuts.
  9. Serve immediately.
