  • 0.3 teaspoon pepper black freshly ground
  • cup bulgur uncooked
  • 15.5 ounce chickpeas drained canned (garbanzo beans)
  • cup cucumber seeded chopped
  • tablespoon olive oil extravirgin
  • 0.5 cup mint leaves fresh chopped
  • cup parsley fresh finely chopped
  •  garlic clove minced
  • 0.5 cup green onions chopped
  • 0.3 cup juice of lemon ( 2 lemons)
  • 1.5 cups plum tomatoes seeded chopped
  • 1.5 cups simply roasted pork cubed () ( 8 ounces)
  • 0.8 teaspoon salt 
  • 1.5 cups water boiling

Directions

  1. Combine water and bulgur in a large bowl; cover and let stand 15 minutes or until water is absorbed and bulgur is tender.
  2. Add Simply Roasted Pork and next 6 ingredients (through chickpeas); toss gently to combine.
  3. Combine lemon juice and remaining ingredients, stirring with a whisk.
  4. Drizzle juice mixture over pork mixture; toss to combine. Chill at least 2 hours.
