Ingredients

  • 0.8 cup apple jelly 
  • 0.1 teaspoon thyme leaves dried
  • 0.5 cup cooking sherry dry
  • tablespoons cooking sherry dry
  • tablespoons ginger root fresh minced
  • cloves garlic minced
  • 0.1 teaspoon ground mustard to taste
  • 2.5 pounds pork tenderloin 
  • 0.5 cup soya sauce 
  • tablespoon soya sauce

Directions

  1. Rub meat with the mustard powder and thyme to taste.
  2. Place in a nonreactive dish and add 1/2 cup sherry, 1/2 cup soy sauce, the garlic and the ginger. Coat the loin well, cover and refrigerate overnight.
  3. Preheat oven to 325 degrees F (165 degrees C).
  4. Bake in the preheated oven for 25 minutes per pound, or until the internal temperature reaches 145 degrees F (63 degrees C). Baste the pork occasionally while cooking.
  5. Meanwhile, heat the apple jelly in a small saucepan over medium heat.
  6. Add 2 tablespoons sherry and 1 tablespoon soy sauce, stir well, reduce heat to low and let simmer.
  7. Pour over the tenderloin when it's done.
