Ingredients

  • cup balsamic vinegar 
  • 0.5 teaspoon pepper black freshly ground
  • teaspoon dijon mustard 
  • teaspoon rosemary fresh chopped
  •  garlic clove minced
  • tablespoon olive oil 
  • pound pork tenderloin cut into 12 slices
  • 0.5 teaspoon salt 
  • tablespoon shallots minced
  • 1.5 teaspoons sugar

Directions

  1. Heat oil in a small saucepan over medium-high heat.
  2. Add shallots and garlic; saut 2 minutes.
  3. Add vinegar and next 3 ingredients; cook until reduced to 1/2 cup.
  4. Heat a large skillet over medium-high heat. Coat pan with cooking spray.
  5. Sprinkle pork with salt and pepper.
  6. Place pork in pan; cook 2 minutes on each side.
  7. Add balsamic reduction; cook 1 minute, turning pork to coat.
