  • 0.3 teaspoon pepper black
  • tablespoon apple cider vinegar 
  • pound pork tenderloins trimmed
  • 0.5 teaspoon lemon zest grated
  •  mangos ripe peeled chopped
  • 0.3 cup mint leaves 
  • tablespoons olive oil 
  • 0.3 cup onion red chopped
  • 0.5 teaspoon salt divided
  •  serrano chiles seeded finely chopped
  • teaspoons sugar

Directions

  1. Heat a skillet over medium-high heat. Coat pan with cooking spray.
  2. Sprinkle pork with 1/4 teaspoon salt and black pepper.
  3. Add pork to pan; cook 16 minutes or until a thermometer registers 145, turning to brown on all sides.
  4. Remove pork; let stand for 10 minutes.
