  •  chipotle chiles in adobo sauce canned chopped
  • tablespoon pumpkin-seed oil 
  • clove garlic minced
  • cup heavy whipping cream 
  • tablespoon brown sugar light
  • 0.3 cup orange juice 
  • lbs pork tenderloin 
  • 0.8 cup pumpkin seeds hulled
  • 0.5 teaspoon salt

Directions

  1. In a small bowl, combine chiles, sauce, orange juice, and sugar. Put pork in a baking dish and add marinade, turning pork to coat. Cover and refrigerate at least 2 hours and up to overnight.
  2. Preheat oven to 37
