  • 1.5 cups apple cider 
  • 0.5 cup apple sauce 
  • 0.3 teaspoon pepper black freshly ground
  •  garlic clove minced
  • pound pork tenderloin trimmed
  • tablespoons juice of lemon fresh ( 1 lemon)
  • 0.5 cup less-sodium beef broth 
  • tablespoon olive oil 
  • 0.3 teaspoon pepper freshly ground
  • 0.5 teaspoon salt 
  • 0.3 cup shallots finely chopped

Directions

  1. Preheat oven to 40
  2. To prepare pork, rub pork with oil and garlic; sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  3. Place pork on grill rack or broiler pan coated with cooking spray.
  4. Bake at 400 for 30 minutes or until a thermometer registers 160 (barely pink).
  5. Let stand 5 minutes before slicing.
  6. To prepare sauce, heat a medium saucepan over medium heat. Coat pan with cooking spray.
  7. Add shallots, and cook 1 1/2 minutes or until tender, stirring occasionally. Stir in cider, broth, applesauce, 1/2 teaspoon salt, five-spice powder, and 1/4 teaspoon pepper; bring to a boil. Cook cider mixture until reduced to 1 cup (about 10 minutes); stir in 3 tablespoons fresh lemon juice.
  8. Serve sauce with pork.
