Ingredients

  • pound pork loin lean
  • teaspoon sage dried
  • 0.5 teaspoon salt 
  • 0.3 teaspoon pepper 
  • cloves garlic finely chopped
  • medium onion cut into 1/4-inch slices
  • 0.5 cup chicken broth 
  • 1.5 pounds acorn squash 
  • medium cooking oil cored unpeeled cut into eighths
  • 0.3 teaspoon salt 
  • 0.3 teaspoon pepper

Directions

  1. Trim fat from pork.
  2. Mix sage, 1/2 teaspoon salt, 1/4 teaspoon pepper and the garlic; rub on both sides of pork.
  3. Cook pork in 10-inch nonstick skillet over medium heat about 3 minutes on each side until brown.
  4. Place onion on pork.
  5. Pour broth around pork.
  6. Heat to boiling; reduce heat.
  7. Cut squash crosswise into 1-inch slices; remove seeds and fibers.
  8. Cut each slice into fourths.
  9. Place squash and apple on pork; sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper. Cover and simmer about 15 minutes or until pork is slightly pink when cut near bone and squash is tender.
