Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • 14.5 ounce canned tomatoes diced drained canned
  • cup chicken 
  • ounce egg substitute 
  • large eggs lightly beaten
  • tablespoon oregano fresh chopped
  • 0.5 cup part-skim mozzarella cheese shredded
  • 0.3 teaspoon salt

Directions

  1. Preheat oven to 45
  2. Heat a medium (10-inch) ovenproof skillet coated with cooking spray over medium-high heat.
  3. Add Chicken-Vegetable Toss and tomatoes; saut 2 minutes.
  4. Combine egg substitute, eggs, oregano, salt, and pepper.
  5. Add egg mixture to pan; reduce heat to medium, and cook, uncovered, 5 minutes (do not stir).
  6. Sprinkle cheese over egg mixture, and place pan in oven.
  7. Bake at 450 for 10 minutes or until set. Broil 1 minute or until lightly browned.
  8. Cut into 4 wedges; serve immediately.
