Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • 0.8 cup carrots finely chopped
  • 0.8 cup celery finely chopped
  • teaspoons chili powder 
  •  chipotle chile in adobo sauce canned
  • cups less-sodium chicken broth fat-free
  • tablespoons garlic minced
  • 15.5 ounce hominy white drained canned
  • tablespoon olive oil 
  • 0.8 cup onion finely chopped
  • 0.5 teaspoon salt 
  • 0.5 cup tomato purée 
  • cups turkey dark light shredded leftover cooked ( and meat)

Directions

  1. Heat oil in a large heavy saucepan over medium-high heat. Finely chop chile.
  2. Add chile and next 5 ingredients (chile through chili powder), and saut 5 minutes or until tender.
  3. Add remaining ingredients, and bring to a simmer.
  4. Cover and cook 45 minutes or until slightly thick, stirring occasionally.
