  • 0.5 cup greek yogurt plain fat-free
  • 0.5 teaspoon kosher salt 
  • cups leeks white green sliced
  • 0.3 teaspoon pepper freshly ground
  • pounds russet potatoes peeled chopped
  • tablespoon butter unsalted
  • cups water
