  • 0.1 teaspoon salt 
  • 2.8 pounds sweet potatoes

Directions

  1. Preheat oven to 35
  2. Bake potatoes at 350 for 1 hour or until tender.
  3. Let cool; peel and cut into chunks.
  4. Place potatoes and bananas in a food processor; process until smooth.
  5. Add melted margarine, 2 tablespoons sugar, nutmeg, cinnamon, and salt; pulse until blended. Divide sweet potato mixture evenly among 6 (8-ounce) ramekins.
  6. Melt 1 tablespoon margarine in a small saucepan over medium-high heat.
  7. Add 2 tablespoons sugar; cook 1 minute.
  8. Add pecans; cook 1 minute, stirring constantly.
  9. Remove from heat; divide pecan mixture evenly among ramekins.
  10. Bake at 350 for 25 minutes or until thoroughly heated.
