  • cups pumpkin ale 
  •  bell pepper diced
  • 15 ounce pumpkin puree canned
  • 15 ounce canned tomatoes diced canned
  • 15 ounce beans white rinsed drained canned
  •  chipotle chilies in adobo chopped to taste (or )
  • handful cilantro leaves coarsely chopped
  • teaspoon cumin 
  • cloves garlic 
  • cloves garlic chopped
  • pound pd of ground turkey (or chicken)
  •  jalapeño coarsely chopped
  • cups kale coarsely chopped
  • tablespoons juice of lime ( - 1 lime)
  • tablespoon oil 
  • 0.3 cup olive oil 
  •  onion diced
  • teaspoon oregano 
  • 0.3 cup pepitas toasted
  • teaspoon pumpkin pie spice 
  • servings salt to taste
  • servings salt and pepper to taste

Directions

  1. Cook the ground turkey in a large pan over medium-high heat, about 15 minutes, and set aside.
  2. Heat the oil in a pan over medium-high heat, add the onion, cook for 5 minutes, add the bell pepper and cook until the onion is tender, about 3-5 minutes.
  3. Add the garlic and cumin and cook until fragrant, about a minute.
  4. Add the beans, tomatoes, pumpkin puree, broth, oregano, spices and chipotle in adobo, bring to a boil, reduce the heat and simmer for 25 minutes
  5. Puree everything in a food processor.
