  • tablespoon baking soda 
  • 0.8 cup firmly brown sugar packed
  • 0.5 cup butter softened
  • cup pumpkin canned
  • large eggs 
  • 1.8 cups flour all-purpose
  • 0.8 teaspoon ground ginger 
  • 0.3 cup blackstrap molasses 
  • 0.3 cup pecans chopped
  • 0.3 teaspoon salt

Directions

  1. Beat butter at medium speed of an electric mixer until creamy; gradually add brown sugar, beating well.
  2. Add egg, beating well.
  3. Add pumpkin and molasses, beating well.
  4. Combine flour and next 3 ingredients; gradually add to pumpkin mixture, beating at medium-low just until blended. Stir in pecans. Spoon into greased muffin pans, filling three-fourths full.
  5. Bake at 375 for 20 minutes.
  6. Remove from pans immediately.
