Ingredients

  • 24 servings brown sugar 
  • 15 ounce pumpkin canned
  • cups dates chopped
  • large eggs 
  • cup pecans toasted chopped
  • teaspoons pumpkin pie spice 
  • cups self-rising flour 
  • cups sugar 
  • 0.5 cup vegetable oil

Directions

  1. Stir together first 3 ingredients in a large bowl, and make a well in center of mixture.
  2. Stir together eggs, oil, and pumpkin; add to dry ingredients, stirring just until moistened. Stir in dates and pecans.
  3. Place paper baking cups in muffin pans, and coat with cooking spray; spoon batter into cups, filling two-thirds full.
  4. Sprinkle with brown sugar.
  5. Bake at 400 for 18 to 20 minutes.
  6. Remove from pans immediately, and cool on wire racks.
