  • 0.5 cup flour all-purpose
  • 0.8 teaspoon pepper 
  •  quail 
  • 0.8 teaspoon salt 
  • 0.5 cup vegetable oil 
  • cups water

Directions

  1. Combine first 3 ingredients; dredge quail in mixture, reserving remaining mixture.
  2. Brown quail in hot oil in a heavy skillet over medium-high heat; drain quail on paper towels, reserving 2 tablespoons drippings in pan.
  3. Whisk reserved flour mixture into reserved drippings; cook over medium heat 3 minutes or until dark brown.
  4. Whisk in 2 cups water until smooth.
  5. Add quail; reduce heat, and simmer, stirring occasionally, 20 minutes or until quail is done.
  6. Serve with potatoes.
  7. Chicken Smothered in Gravy: Substitute 8 chicken legs or thighs.
