  • cups brown rice uncooked minute®
  • 0.3 cup celery chopped
  • 14.5 ounce chicken broth canned
  • tablespoons parsley fresh chopped
  • 1.5 cups mushrooms sliced
  • tablespoons olive oil 
  • small onion chopped
  • 0.5 cup walnuts toasted chopped

Directions

  1. Heat oil in medium saucepan on medium heat.
  2. Add onions and celery; cook 3 minutes or until crisp-tender, stirring occasionally.
  3. Add mushrooms; cook 3 minutes or until mushrooms are tender, stirring occasionally.
  4. Add broth; stir. Bring to boil.
  5. Stir in rice; cover. Reduce heat to medium-low; simmer 5 minutes.
  6. Remove from heat; let stand 5 minutes.
  7. Add walnuts and parsley; mix lightly.
