Ingredients

  • cup julienne-cut bell pepper red (2 x)
  • 0.1 teaspoon pepper black freshly ground
  • tablespoon canola oil 
  • 1.5 cups celery diagonally sliced thin
  • teaspoon sesame oil dark
  • cup edamame green frozen shelled thawed ( soybeans)
  • cup green onions sliced
  • small oranges peeled
  • cups quick-cooking brown rice uncooked
  • 0.5 cup dry-roasted cashews 
  • 0.3 cup teriyaki sauce low-sodium

Directions

  1. Cook rice according to package directions, omitting salt and fat. Set aside, and keep warm.
  2. Heat canola oil in a large nonstick skillet over medium-high heat.
  3. Add celery, onions, and bell pepper; saut 1 minute. Stir in cooked rice, edamame, and remaining ingredients.
  4. Serve immediately.
