Quince Stew, also known as Chorosht'e Be, is a delightful culinary gem that brings the warmth of Persian cuisine right to your table. This gluten-free and dairy-free dish is perfect for those seeking a delicious yet wholesome meal, whether for lunch or dinner. With its unique combination of flavors from tender stew meat, sweet prunes, and fragrant quinces, this recipe is sure to intrigue your taste buds and impress your guests.

The harmony of savory and sweet makes this stew a standout dish that embodies the essence of traditional Persian cooking. Imagine the aromatic scent of garlic and onions sautéing in olive oil, followed by the rich infusion of spices and fresh ingredients simmering together to create a comforting, hearty meal. Each bite offers a tantalizing mix of flavors that will have you coming back for seconds!

Don't worry if quinces are hard to find; consider stocking up when you do spot them at the market, as they can be frozen for later use. If you're looking to switch things up, feel free to replace the stew meat with lamb, veal, or even seitan for a vegetarian twist. However, be mindful not to freeze the stew once prepared, as the potatoes don't fare well in the freezer.

With a preparation time of only 45 minutes, Quince Stew is a hearty, flavorful meal that’s not only satisfying but also easy to make. So don your apron and get ready to serve up a bowl of this incredible stew that is sure to leave everyone asking for your secret recipe!

Ingredients

  •  garlic clove pressed
  • 0.3  juice of lemon
  • 0.3 cup olive oil
  • large onion chopped
  • teaspoon pepper
  •  potatoes peeled cut into medium dice
  • 0.8 cup prune- cut to pieces pitted
  •  quinces entire (make sure to remove the core)
  • teaspoons salt
  • pounds stew meat
  • ounce canned tomatoes canned
  • cups water

Equipment

  • sauce pan
  • casserole dish

Directions

  1. In a 6-quart saucepan, sauté the onion and garlic in olive oil until the onion starts to become translucent (about 1 minute).
  2. Add the meat; cover and cook until meat no longer looks red, stirring occasionally.
  3. Add salt and pepper.
  4. Add water, tomato paste, lime juice, quince, prunes, and potatoes. Simmer, covered, for 1 hour, stirring occasionally until meat is tender.
  5. Serve hot in a casserole dish.
  6. Tricks of the trade
  7. Make sure to remove the entire core of this fruit, since any remainder will cook along and harden like a rock in the inner layer of the fruit! Since quinces are often hard to find, the second I find some I buy many and freeze them already sliced in separate bags so I can use them as needed. Lamb or veal are also delicious in this recipe, or make it vegetarian-friendly by using seitan (wheat "meat") instead. By the way, most Persian stews freeze really well, but don't freeze this one, because it has potatoes and potatoes don't like the freezer!
