Ingredients

  • pound pink radishes red cut into 1/ wedges
  •  lemon zest grated
  • 0.3 cup shallots minced
  •  juice of lemon 
  • 0.5 teaspoon salt 
  • 0.3 cup pistachios shelled
  • 10 large mint leaves sliced chopped thin (spearmint)
  • Tbsp olive oil extra virgin

Directions

  1. Marinate radish wedges:
  2. Mix the radish wedges, minced shallots, lemon zest, lemon juice, and salt in a bowl.
  3. Let sit for 15 to 30 minutes.
  4. Toast the pistachios: Toast the shelled pistachios by heating a small skillet on medium high heat.
  5. Add the pistachios and heat until lightly browned.
  6. Remove from heat and let cool.
  7. Strain excess liquid: When you are ready to serve, if there is a lot of excess liquid in the radishes, strain some of it out.
  8. Toss the toasted pistachios, mint, and olive oil in with the radishes.
  9. Serve immediately.
