Ingredients

  • tablespoons apple cider vinegar 
  • medium carrots grated peeled
  • large fuji apple cored grated unpeeled
  • large golden delicious apple cored grated unpeeled
  • medium size bell pepper green cored seeded thinly sliced
  • cups cabbage green thinly sliced
  •  green onions finely chopped
  • tablespoon maple syrup pure
  • 1.5 cups mayonnaise 
  • servings paprika 
  • cups cabbage red thinly sliced
  • tablespoon sugar 
  • small yam grated peeled (red-skinned sweet potato)

Directions

  1. Whisk mayonnaise, apple cider vinegar, sugar, and maple syrup in small bowl.
  2. Place green cabbage and next 7 ingredients in very large bowl.
  3. Pour dressing over; toss. Season to taste with salt and pepper. Cover and chill 1 hour.
  4. Do ahead: Can be made 8 hours ahead. Chill.
  5. Sprinkle with paprika and serve.
  6. Using the large-holed grating disk and the thin slicing disk of the food processor makes this dish a snap.
