Ingredients

  • 0.3 cup juice of lemon fresh
  • tablespoon lemon rind grated
  • cup raspberries fresh
  • 0.3 cup sugar 
  • 1500 milliliter prosecco chilled
  • 1500 milliliter prosecco chilled

Directions

  1. Combine sugar and juice in a small saucepan; bring to a boil. Reduce heat, and simmer 1 minute, stirring until sugar dissolves.
  2. Remove from heat. Stir in rind. Cover and refrigerate overnight. Strain mixture through a fine sieve into a bowl; discard solids.
  3. Combine lemon syrup and prosecco in a pitcher.
  4. Pour about 1/2 cup prosecco mixture into each of 12 Champagne flutes; garnish each serving with 3 raspberries.
  5. Serve immediately.
