Ingredients

  •  bay leaves 
  • tablespoons cajun spice salt-free
  • cups rice long-grain hot cooked
  •  garlic cloves minced
  • 0.8 teaspoon kosher salt 
  • teaspoon olive oil 
  • cups onion chopped ( 1 large)
  • cups beans dried red
  • 0.8 pound turkey sausage smoked thinly sliced
  • 10 cup water

Directions

  1. Sort and wash beans; place in a large Dutch oven. Cover with water to 2 inches above beans; cover and let stand 8 hours.
  2. Drain beans.
  3. Heat oil in pan over medium-high heat.
  4. Add onion and garlic to pan; saut for 4 minutes. Stir in beans, 10 cups water, and the next 4 ingredients (through sausage); bring to a boil. Reduce heat, and simmer 1 1/2 hours or until bean mixture thickens.
  5. Serve over rice.
  6. Garnish with green onions, if desired.
