  • 0.5 cup canola oil 
  • tablespoon dijon mustard 
  • large apples i use 2 granny smith apples divided grated unpeeled
  • tablespoons jam divided
  • cups cabbage red thinly sliced
  • tablespoon red wine vinegar 
  • 0.5 cup walnut halves divided toasted

Directions

  1. Puree 1 tablespoon preserves, mustard, andvinegar in blender. With machine running,gradually add oil. Season dressing to tastewith salt and pepper.
  2. Reserve 1/4 of grated apple and severalwalnut halves for garnish. Toss cabbage,remaining 2 tablespoons preserves, apple,and walnuts in large bowl. Toss withenough dressing to coat. Season to tastewith salt and pepper.
  3. Garnish with reservedgrated apple and walnut halves and serve.
