  • pound beef for stir-frying cut
  • 0.5 cup beef broth 
  • tablespoons firmly brown sugar packed
  • 14 oz coconut milk reduced-fat canned
  • cups pasta hot cooked
  • tablespoon cornstarch 
  • tablespoons cilantro leaves fresh minced
  • tablespoon lemon zest grated
  • tablespoon asian sesame oil toasted ()
  • tablespoons soya sauce 
  • 1.5 tablespoons thai curry paste red prepared

Directions

  1. In a bowl, mix sugar and cornstarch.
  2. Whisk in coconut milk, broth, soy, curry paste, and lemon peel.
  3. Place an 11- to 12-inch nonstick frying pan over high heat. When hot, add beef. Stir until beef is browned slightly, about 2 minutes.
  4. Remove beef from pan.
  5. Add curry mixture to pan. Stir until boiling. Return beef to pan; stir just until hot, about 1 minute.
  6. Mix pasta with cilantro and oil, then pour curry onto pasta.
