  • 0.5 teaspoon pepper black freshly ground
  • 0.5 cup cilantro leaves fresh chopped
  • tablespoon ginger fresh minced peeled
  •  garlic clove minced
  • 0.3 cup spring onion minced ( 3)
  • 2.5 tablespoons juice of lime fresh
  • 0.5 cup chicken broth ()
  • 0.8 cup creamy peanut butter 
  • tablespoon soya sauce 
  • tablespoon sugar 
  • tablespoons curry paste red
  • cup coconut milk unsweetened canned
  • tablespoons vegetable oil

Directions

  1. Heat oil in saucepan over medium heat.
  2. Addnext 3 ingredients; sauté 2 minutes.
  3. Addcurry paste; stir 1 minute.
  4. Whisk in peanutbutter, then next 5 ingredients; bring toboil. Reduce heat to medium; simmer untilreduced to 2 cups, whisking and addingbroth as needed, about 5 minutes.
  5. Removefrom heat; cool. Stir in lime juice. DO AHEAD:Can be made 3 days ahead. Cover; chill.Rewarm, thinning with broth.
  6. Stir cilantro into sauce and serve.
