Ingredients

  • tablespoons flat parsley chopped
  • tablespoon mint leaves fresh chopped
  • servings pepper black freshly ground
  • 1.5 cups chicken broth low-sodium
  • tablespoon olive oil 
  • cup quinoa red rinsed well
  •  shallots finely chopped
  • 0.3 cup pistachios raw unsalted shelled chopped

Directions

  1. Heat oil in a medium saucepan over mediumheat.
  2. Add shallot, season with salt andpepper, and cook, stirring occasionally, untilsoft, about 5 minutes.
  3. Add quinoa and cook,stirring frequently, until quinoa starts totoast and smell nutty, about 5 minutes.
  4. Addchicken broth and bring to a boil.
  5. Stir in quinoa, reduce heat to low, cover,and simmer gently until quinoa is tender,25-30 minutes (15 if using white quinoa).
  6. Remove pan from heat, fluff quinoa witha fork. Cover; let stand for 5 minutes.
  7. Fold pistachios, parsley, and mint intoquinoa. Season with salt and pepper.
