Suggestions

Ingredients

  •  bay leaf 
  • tablespoon dijon mustard 
  • 0.5 teaspoon pepper freshly ground
  • 0.3 cup port 
  • cups red wine 
  • 0.3 cup red wine vinegar 
  • cups safflower oil 
  • 0.5 teaspoon salt 
  •  star anise 
  • tablespoons sugar

Directions

  1. Bring first 5 ingredients to a boil in a medium saucepan. Reduce heat, and simmer, stirring occasionally, 10 to 12 minutes or until reduced by half.
  2. Remove and discard anise and bay leaf.
  3. Process reduced wine mixture, vinegar, and next 3 ingredients in a blender until smooth. Turn blender on high, and gradually add oil in a slow, steady stream.
  4. Serve dressing with mixed salad greens or grilled fish. Store in the refrigerator.
