  • 30 ounce cannellini beans beans white undrained canned
  • 0.5 cup carrots finely chopped
  • 0.3 cup cilantro leaves fresh chopped
  • large garlic cloves minced
  • cup green onions chopped
  • 1.5 teaspoons ground cumin 
  • teaspoons vegetable oil

Directions

  1. Heat oil in a large nonstick skillet over medium-high heat.
  2. Add carrot; saut 5 minutes.
  3. Add onions and garlic; saut 2 minutes or until tender. Stir in cumin and beans; partially mash mixture with a potato masher. Cook 10 minutes or until thick, stirring frequently. Stir in cilantro.
