  • 1.5 cups peas sweet frozen (from 12-oz bag)
  • tablespoons butter 
  • oz water chestnuts drained sliced canned
  • 10.8 oz cream of chicken soup canned
  • cups roasted chicken cooked chopped
  • cup mayonnaise 
  • 0.5 cup onion chopped
  • oz pimientos drained sliced
  • cups potato chips crushed
  • 8.8 oz rice 
  • oz sharp cheddar cheese shredded

Directions

  1. Heat oven to 350F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  2. In 8-inch skillet, melt butter over medium heat. Cook onion in butter 5 minutes, stirring frequently, until tender.
  3. Meanwhile, cook rice in microwave as directed on package.
  4. In large bowl, gently toss onion, rice, chicken, peas, cheese, mayonnaise, soup, water chestnuts and pimientos. Spoon mixture into baking dish. Top with potato chips.
  5. Bake uncovered 20 to 25 minutes or until bubbly.
