Ingredients

  • 1.5 ounces hendrick's gin 
  • slice lime (for garnish)
  • 0.5 ounce juice of lime 
  • ounce rhubarb 
  • cups rhubarb sliced
  • cup sugar 
  • cup water 

Equipment

  • sieve
  • drinking straws

Directions

  1. Combine rhubarb, water, and sugar in a small saucepan.
  2. Heat over high heat until boiling, stirring to dissolve sugar. Reduce to a simmer and continue to cook until rhubarb breaks down, about 20 minutes.
  3. Remove from heat and let cool. Strain through a fine mesh strainer. Rhubarb syrup will keep for one week in a sealed container in the refrigerator.
  4. Combine rhubarb syrup, lime juice, and gin in a cocktail shaker filled with ice. Shake for 10 seconds.
  5. Strain into a collins glass filled with ice. Top with seltzer water.
  6. Garnish with lime slice and serve with a straw.
