  • 0.3 teaspoon pepper black freshly ground
  • cup brown rice long-grain
  • 15 ounce black beans rinsed drained canned
  • cups cherry tomatoes halved
  • 0.3 cup green onions chopped
  • tablespoon olives ripe chopped
  • 0.3 teaspoon salt 
  • 1.5 ounces cheddar cheese shredded
  • cups water

Directions

  1. Combine rice and water in a medium saucepan; bring to a boil. Cover, reduce heat, and simmer 35 minutes. Stir in beans; cook 10 minutes or until rice is done.
  2. Place rice mixture in a large bowl.
  3. Add remaining ingredients, tossing gently to combine.
